Healthy Pasta Recipe: Linguine With Tuna, Artichokes and Lemon

Whole-grain, fiber-full pasta helps you fill up on relatively few calories, as do artichokes (6 grams per medium choke). In this recipe, there's a specific type of fiber called resistant starch, and studies show that people who eat more foods containing resistant starch eat less overall and burn more calories. With this recipe, you can literally eat up to slim down.

INGREDIENTS:

  • 1 cup frozen artichoke hearts, thawed and drained
  • 1 tablespoon olives, chopped
  • 1 teaspoon garlic, chopped
  • 1 teaspoon olive oil
  • 1 cup grape tomatoes, halved
  • 2 tablespoons white wine
  • 3 ounces canned chunk light tuna
  • 1 cup cooked whole-grain linguine
  • 1 teaspoon lemon juice
  • 1 teaspoon dried rosemary
  • Salt and pepper

DIRECTIONS:

Saute artichoke hearts with olives, garlic, olive oil for 5 minutes. Add grape tomatoes, white wine; simmer until wine is slightly reduced, about 5 minutes. Toss artichoke mixture with tuna, linguine, lemon juice, rosemary, salt and pepper to taste.
