Baked Apple: A Healthy Holiday Dessert

Well, it starts with Halloween candy in October and then it's two straight months of sugar. No wonder people have a hard time sticking to a healthy eating regimen during this time of year—sugar and fat seem practically inescapable.

Desserts are one of the trickiest things to avoid during the holiday season, both because they are delicious and because they are, well, everywhere.

Here's a super-simple dessert that provides all of the warm, comforting goodness of traditional holiday desserts like pumpkin pie and bread pudding with far less fat and sugar. Added bonus: your kitchen will smell phenomenal for hours after you bake these.


  • 4 medium baking apples
  • 1/4 cup dark brown sugar, packed
  • 1 tsp cinnamon
  • 1 small piece (1") ginger, peeled and minced (about 2 tsp)
  • 3 tbsp roasted cashews, chopped
  • pinch of salt
  • 2 tsp butter, divided


Preheat oven to 375 degrees F.

Put a kettle of water on to boil.

Use a paring knife or an apple corer to scoop out the stem and core of the apples, making sure not to go all the way through to the bottom of the apple. Place the apples in a 8"x 8" baking dish.

Combine the brown sugar, cinnamon, ginger, salt and cashews in a small bowl. Mix well. Divide mixture between the apples, tucking it into the wells you created.

Top each apple with 1/2 tsp butter.

Once the water has boiled, pour about 1/2" of it into the bottom of the baking pan.

Bake for 30 to 35 minutes or until apples are very tender.

Serve warm with vanilla frozen yogurt if desired.
