Roasted Chicken and Asparagus With Creamed Leeks

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 lemon, cut into thin slices
  • 1 pound asparagus, rough bottom ends trimmed
  • 2 large leeks, ends and dark green stalks removed
  • 2 tablespoons olive oil
  • 2 garlic cloves, finely minced
  • 2 teaspoons sea salt
  • 1 teaspoon finely ground black pepper
  • 1 cup white wine
  • 1/4 cup organic cream

Preheat oven to 400 degrees F.

Chop leeks (take care to rinse between the layers well as sand and dirt can get trapped inside) into 1/2-inch pieces. Place in the bottom of an oven-proof glass or ceramic dish, and pour white wine on top of leeks. Brush chicken breasts with olive oil and sprinkle both sides with salt and pepper. Place chicken breasts on top of the leeks, and top chicken with lemon slices.
