How to Cook With Sustainable Seafood

Light Tuna Salad Sandwich

Ingredients

  • 1 6-ounce can pole-caught albacore tuna (such as Whole Foods 365 or American Tuna brands), drained
  • 1/2 cup low-fat or nonfat Greek yogurt
  • 2 celery stalks with leafy tops, diced
  • 2 radishes, diced
  • 1/4 cup grated carrots
  • 1 teaspoon fresh minced dill, or 1/2 teaspoon dried dill
  • 2 teaspoons minced green onion
  • 2 teaspoons fresh lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon Old Bay seasoning, optional
  • 4 leaves green-leaf lettuce
  • avocado slices, spritzed with lemon juice to prevent browning
  • 8 slices whole-wheat bread, toasted

In a medium-sized bowl, combine tuna with all other ingredients and mix well. Layer tuna salad, lettuce and avocado slices between bread and serve. Serves four.
