Gluten-Free Elvis Presley Special Recipe

Ingredients

  • 1 banana, cut in half length-wise or sliced in bite-sized pieces
  • 1 tablespoon honey
  • 1 1/2 teaspoons sunflower seed butter
  • 2 teaspoons ground cinnamon

Spray a small frying pan with nonstick cooking spray. Heat over medium heat. Place banana pieces cut-side down in pan for about five minutes, or until lightly browned. Remove warm banana slices from pan and place on plate. Spread each half with sunflower seed butter, sprinkle with cinnamon, and drizzle with honey.

Sweet and Spicy Snack Mix Recipe

Ingredients

  • 1 egg white
  • 1/4 cup brown sugar
  • 1 cup raw, slivered almonds
  • 1 cup raw, shelled sunflower seeds
  • 2 cups Chex cereal
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cumin
  • 1 teaspoon cayenne pepper

Preheat oven to 325 degrees F. Spray a baking sheet with nonstick cooking spray, or line with parchment paper.

In a large bowl, whisk the egg white until foamy. Add sugar and whisk until combined. Add almonds, sunflower seeds, cereal and spices. Toss well to coat. Spread mixture in an even layer on baking sheet. Bake for 15 minutes, stirring once. Turn oven off. Remove sheet from oven and stir. Return pan to oven and leave in oven for additional 15 minutes with the heat turned off. Remove pan from oven and cool on a wire rack. Store snack mix in an airtight container for up to two weeks.
