Grades 10 - Adult. Basil season is the best season! Join Grass Lake–based community farm chef Kori Kanayama at her farm in Grass Lake for a fragrant, hands-on celebration of summer’s most beloved herb. During this adults-only workshop, you’ll head into the garden to harvest sun-loving basil at its peak — when its aroma is bold and its flavor at its brightest.
Back in the farm kitchen, Kori will guide you step-by-step through making classic fresh pesto, covering technique, balance, and simple variations you can recreate at home. You’ll also have the chance to experiment with shiso, a Japanese herb with a unique basil-like flavor, and discover how it transforms this familiar sauce into something entirely new. After blending your creations, we’ll cook pasta and seasonal vegetables so you can taste your pesto immediately and compare flavors.
Participants will take home their own freshly made pesto. Please bring one or two pint jars with tight-sealing lids. If you have a food processor, you’re encouraged to bring it; a limited number will be available to share. Instructor: Kori Kanayama. 1 class. The rain date for the Thursday class is 8/13 and the rain date for the Saturday class is 8/15.
