Aleppo’s cuisine has long been revered across the Middle East. At the epicenter of spice trading, and with historically large Jewish and Armenian populations, its cuisine has a complexity and richness of flavor that blends ingredients, flavors and spices we often wouldn’t think to put together. In this class, we will play with the pomegranate and cherry flavors that are so prevalent in cuisine from this area, as well as the “Aleppo pepper,” a smoky, tart spice that is often now imported from neighboring Turkey due to the Syrian Civil War. We’ll make Muhammara, a spiced red pepper, walnut and pomegranate molasses dip, Kebab Bil Keraz - cherry kebab, made with seasonal fresh cherries, and Fattoush, a traditional levantine salad filled with fresh vegetables drizzled in sumac and a pomegranate vinaigrette. You’ll learn how to play with the sour-sweet-savory profiles that have made Aleppo cuisine famous for centuries.
