3 Healthy BBQ Recipes Using Greek Yogurt

Dust off the BBQ and get ready to grill this summer. Grilling doesn't have to mean prepackaged sauces full of preservatives. Using tangy Greek yogurt with a variety fresh ingredients and pantry staples can turn any barbecuing adventure into a healthy and delicious meal.

Yogurt-Marinated Chicken Kebabs

Yogurt tenderizes the chicken and adds a tangy, Mediterranean flavor. Pair this dish with salad, rice or pita bread.

Serves 4 to 6

Ingredients:

2 teaspoons paprika
1 teaspoon crushed red pepper
1 cup (8 oz.) plain low-fat or fat-free plain Greek yogurt
3 tablespoons extra-virgin olive oil
2 tablespoons red wine vinegar
2 tablespoons tomato paste
2 teaspoons kosher salt
1 teaspoon black pepper
6 garlic cloves, peeled and flattened
1 unpeeled lemon, thinly sliced into rounds
2 to 3 pounds chicken, skinless and boneless, cut into cubes

Directions:

Mix the paprika and red pepper in a large bowl and add 1 tablespoon warm water. Let it stand for 5 minutes until thick paste forms.

Add yogurt, olive oil, red wine vinegar, tomato paste, coarse salt and black pepper to spice the mixture in bowl. Whisk to blend.

Stir in the garlic and lemon slices and then add the chicken. Cover and chill for at least an hour or overnight.

Place the chicken pieces on the skewers and then discard the marinade. Grill the chicken skewers until golden brown and cooked through. Serve with lemon wedges.
