This is a great meal to prepare on your last night of camping. Make it with grilled veggies and camper pie dessert.

Prep Time: 20 minutes
Servings: 4-6
Ingredients:
- 4 zucchini
- 1 large onion
- 1 pkg sausage (hot or regular)
- 1 pkg pre-sliced mushrooms
- 2 potatoes
- 1 tablespoon of oil
- salt and pepper
- garlic clove
- salsa
Directions:
- Quarter and dice zucchini
- Chop onion
- Mince garlic clove
- Dice potatoes
- Crumble sausage in no stick fry pan, drain and set aside
- Add 1 tablespoon of oil to pan
- Add zucchini, onion, garlic, and mushrooms and potatoes
- Saute for 10-15 minutes until potatoes are fork tender
- Add salt and pepper
- Add sausage
- Stir and serve
- Garnish with salsa
