Carrot, Kale, Apple and Ginger Smoothie

  • 1/2 cup organic apple juice
  • 1/2 cup water
  • 2 handfuls raw kale, washed and chopped
  • 1/2 cup grated carrots (or chopped carrots)
  • 1 medium-sized apple, cored and cut into chunks
  • 1/2-inch piece of peeled ginger root
  • 2 handfuls of ice, if desired

Put all ingredients into a blender and combine until smooth. If you don't have an incredibly powerful blender—like a Vitamix—you might end up with chunks of kale in your smoothie. If this bothers you, pour your smoothie through a fine mesh sieve or strainer before you drink.
