Grilled Vegetables for the Campsite

This easy recipe makes a great side dish for dinner at the campsite.

Ingredients:

  • 1 Red pepper
  • 1 Zucchini
  • 10 Mushrooms
  • 1 Sweet onion
  • 2-3 Garlic cloves
  • 1 Sweet potato
  • Olive Oil
  • Salt
  • Pepper
  • Thyme
  • Basil
  • Rosemary

Directions:

  1. Cut 1 red pepper, 1 medium zucchini, 10 mushrooms, 1 sweet onion, 2-3 cloves garlic, and 1 sweet potatoes into chunks or slices.
  2. Spray with olive oil.
  3. Sprinkle salt, pepper, thyme, basil and rosemary on top of veggies.
  4. Put in aluminum foil or a grill pan.
  5. Stir while grilling.
