Stay Fit for Summer: Summer Squash Drumsticks

If you don't eat meat, make the vegetarian version of drumsticks with summer squash. Stuffed with barley, they're perfectly filling, and a handful of dried cranberries adds a pop of unexpected flavor in every bite. You can stuff the middle with any grain—cous cous, rice or quinoa—so don't bother cooking up a whole pot of barley on a hot summer night if you don't have to.
