Perfect for those who don't enjoy baking, or for those dog days of summer where you can't imagine turning on the oven, this raw tart is perfect for picnics, parties and even weeknight dinners. If fresh cherries aren't in season, substitute strawberries.
- 1 cup walnuts
- 1 cup shredded coconut
- 7 to 8 dates, soaked in water until soft
- sea salt, dash
- 3 avocados
- 1 teaspoon vanilla extract
- 6 tablespoons maple syrup
- 4 tablespoons raw cacao powder
- pinch of cinnamon
- pinch of sea salt
For the crust: Place all ingredients into a food processor and process to reach a consistency that is slightly chunky.
Use mold of choice (muffin tin or spring-form pan) to build the tart. For muffin tin: Dole two tablespoons of crust mixture into each cup, and press firmly into mold. Place in fridge for an hour to set.
For the chocolate mousse: Place all ingredients into food processer and process until smooth and creamy. Scoop desired amount of chocolate mousse into tart mold of choice and spread evenly.
Top with fresh organic cherries or strawberries, and sprinkle with chopped pistachios (optional).
