5 Things I Learned From My Nutrition Coach

#4) You can make one meal last a week.

I like being creative: I enjoy writing, and I've tried painting, but I never viewed cooking as a creative outlet, until I met Fran. With a little imagination and forethought, you can turn just one key ingredient into a week's worth of lunches. How convenient is that?

Try this:

Cook up a big batch of quinoa on Sunday; then incorporate it into your work-week meals:

  • Monday: Top it with steamed veggies and Braggs amino acids.
  • Tuesday: Mix it with seedless grapes, sliced almonds, chopped fennel, thyme, tarragon, vinegar, and olive oil.
  • Wednesday: Eat it for breakfast with Greek yogurt, cacao, honey, hemp seeds and raspberries.
  • Thursday: Eat it as a side with salmon and broccoli.
  • Friday: Add it to a wrap with lettuce, avocado and sliced veggies.

#5) You really can eat when you are hungry, if you eat the right things.

I used to go straight for the crackers when my stomach started grumbling. The problem: I always ate way too many of them. They made me feel full but they did not give me the pick-me-up I really needed to forge through the rest of the day.

Now I eat apples and cheese instead of crackers and cheese.

Try this:

Cut up a few slices of cucumber, add a dab of cream cheese, then a bit of smoked salmon, and top them with a couple of capers.
