Tortellini Salad Kabobs

Tortellini Salad Kabobs

What You'll Need:
  • ?  cup olive oil
  • 1 finely-chopped garlic clove
  • Salt
  • Italian seasoning
  • Fresh mozzarella balls
  • 1 package grape or cherry tomatoes
  • Kabob sticks
  • Spinach tortellini

Directions

Take a medium-size mixing bowl and drizzle 1/8 cup of olive oil over the mozzarella balls. Sprinkle Italian seasoning over and mix together. Place in the refrigerator while you cook the tortellini.

In a small pot, heat up olive oil (low heat) and finely chopped garlic. Stir in salt and let the garlic season the olive oil. This should only take about five minutes. When done, set aside.

In a large pot, boil water (salted optional), place tortellini in water and lower to med-high heat. Cook for about six minutes (follow directions on your tortellini package). The tortellini will start to float when it's done. Drain the pasta and rinse under cool water.  Either place pasta back in the pot, or place in a medium-size mixing bowl. To save on cleanup duties, it's easier to use the pot.

Take the olive oil mix and drizzle it over the tortellini. Mix together and place in the refrigerator for 10 to 20 minutes.

Once your tortellini mix is cool, it's time to make the kabobs.

Take your kabob stick and start creating your kabob. Alternate between tomato, mozzarella and tortellini until the stick is full. Keep a thumb-width space clear on each end of the stick.

Continue to use all the ingredients. Place in the refrigerator until you're ready to serve.

If you want, use basil or mint on the stick to add a little flavor.
