Fresh Pesto Pasta Salad
The addition of mayo in this salad creates a tangy, refreshing side dish.Serves 6
Ingredients:
3 cups packed fresh basil
3 garlic cloves, chopped
1 tablespoon lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
1/3 cup toasted pine nuts
1/2 cup olive oil
1/2 cup grated Parmesan cheese
1 pound fusilli pasta
1 cup low-fat or nonfat plain Greek yogurt
2, 16-ounce packages of cherry tomatoes, cut in half
Directions:
In a food processor or blender, puree basil and garlic until smooth. Add garlic, lemon juice, salt, pepper, pine nuts and olive oil. Puree until well combined. Fold in the yogurt and set aside.
Cook pasta according to the package directions and drain. Pour into large bowl.
Add pesto-yogurt mixture to pasta and toss with the tomatoes. Garnish with more cheese, if desired.

Greek Yogurt with Honey and Berries
This healthy treat loaded with fresh berries and sweet honey is good as a dessert or as a snack.Serves 4
Ingredients:
1 cup (8 ounces) plain nonfat Greek yogurt
4 tablespoons honey
1/2 pound mixed berries of your choice, washed and roughly chopped
Directions:
Spoon yogurt into a large bowl or platter and drizzle with honey. Then top with berries.
