"Coco": Coconut-Crusted Chicken Fingers
Try not to sing "Un Poco Loco" while you make this quick and easy dinner. Slice chicken breasts into tenders (or grab pre-cut ones in the meat department), then dip each one in a mixture of eggs and seasoning mix and roll them in unsweetened shredded coconut. You can either add them to a preheated pan coated in coconut oil and cook on both sides or bake them in the oven until cooked through . "Hotel Transylvania 3": Roasted Garlic Chicken
Plenty of garlic will surely keep the vampires away when it comes to this recipe. Season a couple bone-in, skin-on chicken thighs with salt and pepper and brown them in a pan with oil. Add thinly sliced onions and at least two full garlic cloves to the pan once the chicken thighs are browned. When the onions are translucent, add a half cup of chicken stock with a splash of wine--don't worry, the alcohol will burn off while it cooks--and a bit of flour to create a sauce. Once the chicken has an internal temperature of 165 degrees, serve over rice with your family's favorite sides.

Toss fresh baby or rainbow carrots with olive oil, salt and a hearty drizzle of honey and oven roast them at 375 degrees for about 25 minutes. A quick cinnamon sprinkle makes the perfect finishing touch on Pooh's favorite food.
