Healthy Summer Smoothie Recipe

Ah, summertime: I don't know about you all, but after the cold and snowy winter I experienced in my neck of the woods, I'm excited that summer is officially in full swing. It's the time of year when I look forward to lots of sunshine, warm weather and days spent at the beach. It's also the season for ice cream, one of my absolute favorite sweet treats. But let's face it: if I indulged in ice cream every day, it wouldn't be great for my waistline.

I'm a big proponent of eating healthy, but I also want everything to taste good. I love coming up with new smoothie recipes that are good for both me and my family and taste like dessert. It's a win-win! Here's one of my favorite smoothie recipes that helps satisfy my ice cream and sweet tooth cravings. (And the kids will love it, too!)

Ingredients:
1 cup reduced fat milk (I use unsweetened almond or coconut milk)
1 banana (I usually peel, cube and freeze the night before)
1 tablespoon all-natural peanut butter
1 teaspoon unsweetened cocoa powder
1 large handful spinach
1 teaspoon honey or 100 percent pure maple syrup (optional)
A few ice cubes

Directions:
Place all ingredients in a blender and mix until smooth and creamy.

This smoothie is quick and easy to make. It's much healthier than ice cream, and it tastes like a chocolate frapp?! I promise you can't even taste the spinach, and the best part is your kids won't either. It's a great way to sneak in some healthy foods while enjoying a delicious cool treat on a hot summer day.
