Chicken and Dumplings

This meal is prepared on an open fire, so make sure you have a nice bed of coals, not open flames that would burn the chicken.

  • 1 whole chicken
  • 1 tbsp. cooking oil
  • salt and pepper to taste
  • 1 medium onion cut up
  • fresh parsley
  • dash of thyme
  • 2 cans chicken broth
  • 1 box Biscuit mix


  1. In a Dutch oven fry up chicken with onion, salt and pepper.
  2. Add broth, parsley, thyme.
  3. Simmer about 1 hour
  4. When ready mix biscuits to box instruction (whole box).
  5. Add biscuits to Dutch oven and simmer covered about 20 minutes, turning biscuits once .
