The Fish Class Understand many different types of fresh water and salt-water fish. Round fish and flat fish; fish fabrication (filleting); Learn cooking methods and techniques (including marinating and grilling), and gain a repertoire of recipes to approach the fish counter with confidence. On the menu: Cajun Catfish Sliders with Calypso Sauce and Honey Buns; Coconut Braised Cod with Tomatoes, Peppers and Rice; Crispy Wontons with Pomegranate Salmon Brulee and Baby Arugula; Grilled Swordfish Kebabs Nicoise; Fish Stock.
