This is the IN-PERSON option for KojiConnect: Japan, happening on Sunday, July 19 from 9:30AM - 14:00PM JST | $80 USD per person. Address: Gomi Shoyu – KANENTE 1-15-10 Joto, Kofu City, Yamanashi 400-0861, Japan Participants will experience a hands-on koji-making workshop that recreates the essential stages of the traditional three-day process within a single day. Through collaborative learning and direct engagement, attendees will: - Participate in hands-on koji production - Explore the environmental conditions + techniques required  - Gain cultural and technical insights into traditional Japanese koji-making practices - Interact directly with producer and fermentation expert Gomi Hitoshi - Connect with a global community of fermentation enthusiasts Participants will receive approximately 200 grams of prepared koji to take home.
