Week 1 - Spanish Chicken Marbella accompanied by roasted fingerling potatoes tossed in rosemary butter and lemon charred broccolini served with a pomegranate reduction. Knife cut of the week: break down a whole chicken into 10 pieces. Week 2 - Beef Wellington served alongside chive scalloped Gold Potatoes & wilted seasonal greens with a luscious Morel and Green-peppercorn Sauce. Knife cuts of the week: Filet whole Tenderloin, Chiffonade, Thin Slice/Chop. Week 3 - Local Fish served on top Squash & Clementine Risotto. Knife cuts of the week: Supreme, Filet, Dice. Week 4 - Herb & Wine Lamb Winter Vegetable Stew. Knife cuts of the week: large dice leg of lamb, medium dice vegetables such as golden beets, sweet potatoes, Chiffonade herbs.
