During this 14-day intensive overnight science course, students will work and play in the beautiful organic valley of Trout Lake, Washington. Students will camp on a small organic farm and will spend their days and evenings farming, cooking, biking, and studying local and global food systems. We'll find time for relaxation and recreation while taking the academic nature of the course seriously. Students will walk away with service hour credit and high school elective science credit. Each day we will bike to different farms and get our hands dirty helping out. Afternoons we will find time for discussion, reflection, relaxation and enjoyment. In the evenings, we will create delicious meals from what food we’ve harvested during the day. During the week we will have a chance to learn about a diverse spectrum of agriculture–organic dairy, artisan cheese making, beekeeping, vegetable and herb growing, as well as pastured livestock for wool and meat production. As we work and play, we will have conversations about the challenges and opportunities of farming and dive into relevant science and policy topics. If you love food, the outdoors, to learn and try new things, and if you are curious about organic farming–this course is for you. Students who fully participate and complete their coursework to a satisfactory level will walk away with a certificate of course completion. This certificate can be brought to their high school administrator for a semester of high school science credit.
