What's Included

Chef Erich Owen will teach participants the art of sous-vide cooking. Sous-Vide, French for ‘under vacuum’ is a method of cooking in which food is sealed in an airtight bag and submerged in water to create a controlled, low-temperature cooking environment. Championed by famed chefs Heston Blumental and Bruno Goussault, and featured on TV’s Top Chef and MasterChef, sous-vide has gained great popularity in the culinary world.   Participants will work with Chef Erich to craft menus including: Crispy Rice with Spicy Tuna and Soy Pudding Crispy Striped Bass with Local vegetables, Yuzu Emulsion, Chili Oil Sous Vide Five Spiced Duck Breast, Curried Salsify Puree, Cherry Gastrique Blue Cheese, Cheese Cake Hibiscus Gellee, Black Pepper

Our home is a turn-of-the-century train depot, a beautiful building listed on the National Register of Historic Places, located in scenic Telluride, Colorado.
