Several special diets will be examined, including those that help manage lactose intolerance, gluten intolerance, irritable bowel syndrome, diabetes, hypertension, high cholesterol, metabolic syndrome, arthritis, and food allergies. The vegan diet will be covered as well. Note: NFS Core. Prerequisite: Basic Nutrition and Food Science. This is a lecture class.
