Slow-Cooker Mexican Oat Chili Recipe

When you think of steel-cut oats, sweet breakfast recipes may come to mind. But they can also be used as a base for savory dinner dishes, as well.

This chili recipe is chock full of flavor. Plus, steel-cut oats are high in fiber and have a low-glycemic index, meaning you'll stay satiated longer.

Serve this dish with tortillas or corn tortilla chips for a filling, post-workout meal.

Ingredients

  • 1 cup steel-cut oats
  • 1 cup salsa
  • 1/2 cup chopped cilantro, plus more for garnish
  • 2 1/2 cups chicken broth
  • 1/2 cup corn
  • 1 chopped red bell pepper
  • 1 cup chopped carrots
  • 3 chopped green onions
  • 1/2 can black beans (rinsed)
  • Sliced avocado (optional)

Instructions

Combine all the ingredients except for the avocado in a slow cooker. Cover and cook for 3 to 4 hours on low, or until the oats are cooked all the way through. Stir at the half-way point.

Once the chili is done, garnish it with sliced avocado and additional fresh cilantro, if desired.

Serves 4 to 6
