Fruit and Cheese Kabobs: On wooden skewer, assemble cubes of cheese, grapes, strawberries and mango.

Roast Beef Sliders: Assemble slices of roast beef and provolone cheese on whole-grain rolls with thinly sliced red onion and salad greens.

Curried Deviled Eggs: Remove the yolk from hard-boiled eggs, mash with Greek yogurt, curry powder and Dijon mustard. Fill egg whites with seasoned mixture.

Panzanella: Cut crusty bread into cubes. Mix with chopped tomato, cucumber, red onion and basil. Dress lightly with olive oil and red wine vinegar.

Marinated Veggie Pita Pockets: Mix chopped veggies such as mushrooms, tomatoes, cucumber, onions, bell peppers, radishes—whatever you prefer—and dress with olive oil and balsamic vinegar. When ready to eat, spoon into halved pita bread.

Couscous Salad: Mix cooked couscous with tiny bit of olive oil, raisins, diced apples, feta cheese and pine nuts.

Asparagus and Prosciutto: Steam asparagus until tender. Wrap in half-slice of prosciutto and season with drizzle of fresh lemon juice, salt and pepper.

Tex-Mex Salad: Drain and rinse canned black beans and canned corn. Mix with diced tomatoes, red onion, jalapeno and avocado. Serve with baked corn chips or crudit?s.

Spinach Salad with Berries and Salmon: Assemble cooked, chilled salmon broken into bite-size chunks with baby spinach, berries and pecans. Drizzle with raspberry vinaigrette if desired.

Tuna on Romaine: Prepare tuna salad with Greek yogurt, capers and diced celery. Serve on crisp romaine leaves.

BBQ Chicken Sandwiches: Shred leftover chicken and toss with your favorite barbecue sauce. Serve on whole-wheat rolls with sliced red onion and cabbage.

Pesto Shrimp Rolls: Toss cooked shrimp with pesto. Serve on crunchy rolls.

Anything Goes Pasta Salad: Mix cooked pasta with your choice of diced veggies, shredded chicken, olives, etc. Toss with olive oil and red wine vinegar.

Cold Steak Salad: Assemble salad greens and tomatoes. Top with cold, thinly sliced steak and blue cheese crumbles.

Finish off your picnic with something sweet:

  • Trail mix with nuts, raisins and chocolate chips
  • Mix peanut butter and cream cheese and spread between graham crackers
  • Share a bar of dark chocolate shared with everyone
