2 Plant-Based Breakfast Recipes for Athletes

Sunshine Tofu Scramble

Ingredients:

  • 1 tsp extra virgin olive oil
  • 1 clove garlic, minced
  • 1/2 small onion, diced
  • 1 small yellow summer squash, sliced
  • 1/2 yellow bell pepper, diced
  • 1 cup sliced mushrooms
  • 5 oz. extra firm tofu (1/2 package), cubed
  • 1 tsp oregano
  • Black pepper and salt to taste

Instructions:

  1. Heat olive oil in a skillet.
  2. Add garlic, onion and squash and saute for 3 minutes.
  3. Add bell pepper, sliced mushrooms, tofu, oregano and seasonings.
  4. Saute for an additional 5 minutes, until vegetables are tender.

Makes 2 servings
