If you haven't yet prepped your meat, give these three ground beef recipes a try.
Ground Beef Lollipops
1-pound ground beef
1 tbsp. dried onion bits
1/2 tsp. each salt, pepper
2 tbsp. ketchup
4 or more wooden sticks (for the handle)
1 egg, beaten
About 1 cup bread crumbs
2 tbsp. vegetable oil (more if needed)
Mix ground beef, onion, salt, pepper and ketchup in a bowl. Form the mix into balls tightly around the sticks, leaving room for the handle. Put crumbs on a plate, beat the egg and dip your lollipops; first in the egg and then in crumbs. Heat your oil in a nonstick pan and fry the lollipops until they're crispy and brown on all sides. Be sure the meat tests 160 degrees before taking them out.
Ground Beef 'n Gravel
12 ounces lean ground beef
2 tbsp. low-sodium soy sauce
1 package white rice and wild rice mix
Small can of water chestnuts, drained and chopped
1/2-cup coarsely chopped walnuts
Brown the ground beef, breaking it up in the pan as it cooks. Stir in the soy sauce and rice mix, and add water as is called for on the rice package. Bring everything to a boil, cover, reduce heat, and cook for 20 minutes or until the rice is tender. Over low heat, stir in the water chestnuts and walnuts to heat through.
